Ok I’ll be brief because it really annoys me when I go to a website for a recipe and the person posting it has a 400 page essay before they share the recipe.
But, I’ll just say one thing. I LOVE that berries are in season! They are my favorite! So since we have raspberries coming out our ears from our backyard bush, I get inspired to make a Cobbler with the berries on had on hand last night.
Ps it has coconut! 😍
Here’s the recipe:
Mixed Berry Cobbler
Preheat oven to 350.
For Crust:
1 C flour (almond or coconut are good options)
1/4 C Brown Sugar
1/2 C pecans
1/2 C shredded coconut
1 cube butter
Put all ingredients in 9×13 pan and put in oven, mix as it melts about 10 minutes. Remove and separate 1/3 of mixture and place in bowl, set aside. Press the rest inside the pan.
Filling:
1 – 1 1/2 C each Fresh
Strawberries, sliced
Blueberries
Raspberries
1/4 C water
3-4 TB honey
Spread fruit mixture over crust in pan, sprinkle with remaining crust mixture. Bake at 350 for 30 min. Enjoy!
